Tupelo Honey

This rare and exquisite honey comes from a small region between Florida and Georgia where the white gum Tupelo tree grows in abundance. Its high fructose-to-glucose ratio is easily digestible and doesn't result in the blood sugar spikes caused by sucrose. The high fructose content also keeps the honey from crystallizing readily and the raw honey can stay liquid for years.

The flavor is buttery and warm like bottled sunshine. Try it in delicate teas, with cheese, or as a marinade for salmon.
