Honey Bundt Cake
Ingredients:
· 3 eggs
· ¾ cup white sugar
· 16 oz (1.25#) Honey
· ¾ cup vegetable oil
· 1 cup buttermilk or sour cream
· 2 tsp. vanilla extract
· 3 ¾ cup all purpose flour
· 1 ½ tsp. baking soda
· 1 tsp. baking powder
· 1 tsp. ground ginger
· ½ tsp. salt
Method:
· preheat oven to 350°F
· in a large bowl or stand mixer, whisk eggs and sugar until pale and fluffy
· add 1 ½ cup honey, the oil, buttermilk, and vanilla, blend until smooth
· sift dry ingredients and add to liquid, beat until well blended
· pour into a greased and floured bundt pan
· bake for about an hour, or until a toothpick inserted into the cake comes out clean
· let pan cool for a few minutes, flip cake over onto a wire rack
· prick hot cake all over with a fork and drizzle the remaining honey over – let cool completely before slicing
